Pre-orders for the new brand aged sake “THE EVOLUTION 01” are available in limited quantities

A new brand of sake was born from the sake premium lounge “Ichizen Fugetsu” where adults can spend their time as they wish. The first “THE EVOLUTION 01” will be available for pre-order on the special site from 12:00 on October 14th (Thursday).

You can feel the refreshing green apple-like rising scent (Uwadachika), the banana-like scent, and the pleasant complex scent.

mouthfeel
A soft and gentle first touch with a slight gas feeling. You can feel the refreshing sweetness and juiciness. The aftertaste is crisp and light, while leaving a savory aftertaste in the mouth.

Temperature zone
We recommend cold snow to cold flowers (5°C to 10°C). By cooling well, the balance between clean acid and moderately soft umami will be further enhanced.

Pairing
Seafood such as white fish, shrimp, and scallops. Seafood gratin, cream stew, etc. using white sauce.

The brewing partner is the long-established sake brewery Iinuma Honke with a history of 300 years.

The Iinuma Honke’s sake brewing began in the Edo period and the Genroku era.
While inheriting the tradition of 300 years since then, always looking ahead of the times and conscious of the future, sake brewing is reflected in the taste of the representative brand “Kinoene”, even for young people. Emphasis is placed on the sharpness and freshness that are preferred. It is a sake brewery where young brewers who will lead the next era continue to challenge at the forefront even in the field of sake brewing.
