The CHOYA Ginza BAR, a specialist plum wine cocktail establishment, will offer its first Japanese confectionery creation: ‘Starry Night Plum and Peach Yōkan’ (Ume Momo no Yōkan) Starry Sky and Moonlight” will be available for a limited period from Monday, 6th October to Wednesday, 17th December.
This confection combines the autumn night sky, symbolised by the Orionid and Taurid meteor showers, with the image of the full moon cherished as a seasonal tradition—the Mid-Autumn Moon Festival and moon-viewing. It expresses the contrasting beauty and transience of autumn nights, where the brighter the moonlight, the more the stars’ brilliance fades, all captured within a single Japanese sweet.
The starry sky-inspired yōkan features layers of Nanko plum, white bean paste, white peach and Earl Grey tea, topped with a night sky layer made from butterfly pea and agar, sprinkled with gold leaf.
The candied plum, representing the full moon, is made by carefully simmering hand-picked ripe plums with honey and sugar to prevent the skins from breaking, then soaking them overnight in plum syrup. Savour the marriage of the yōkan, with its distinctly varied textures across layers, and the candied plum, where tartness and sweetness are perfectly balanced.
