Long-beloved Chiba confectionery shop “Okanashi no Taiyō” launches its second cherry blossom dessert, the spring-limited “Sakura Monaka”, on Friday 13th February. Crafted around the concept “A single cherry blossom in wagashi”, this monaka features a pale cherry blossom hue in its flavour, aroma, and form.

The monaka shell is a pale cherry blossom pink, crafted to resemble the true colour of cherry blossoms as closely as possible. Furthermore, its delicate form, shaped like a cherry blossom flower, resembles a work of Japanese confectionery art. The gentle spring-like hue and the meticulously crafted shape evoke an elegant, quiet presence, as if a single cherry blossom has been gently enclosed within.

The moisture content is meticulously calibrated to prevent the monaka shell from becoming damp. Even though it is cherry blossom paste, it is entirely distinct from that used for dorayaki; this is a bespoke paste, kneaded exclusively for monaka.
