A seven-course special menu expressing the 'Autumn Sparkle'
Using vibrant ingredients reminiscent of autumn foliage—such as beetroot, raspberries, and plum—we have expressed the “brocade” that adorns Tokugawa Garden. The main dish, “Aichi Duck”, undergoes nerve-pinning to draw out the duck’s inherent deep umami and tender flesh. Other elements include “Autumn Maple Sea Bream”, “Chestnuts”, and “Persimmons”, showcasing the very best of autumn’s bounty at its peak. Autumn maple leaf shapes adorn the accompaniments and petit fours, creating a composition designed to let you savour the deepening autumn with both your eyes and your palate.
