Started “& CHEESE SAKE” project at Makuake with the concept of “cheesecake without feeling guilty”

The “& CHEESE” series developed by “Muscle Deli” of body make-up food D2C with the concept of “cheesecake without feeling guilty” that can be eaten every day. This time, as a new challenge, we will develop a low-sugar cheesecake “& CHEESE SAKE” using sake lees from “Kamikawa Taisetsu Sake Brewery” in Hokkaido.

We use natural sweeteners and sake lees to bring out the richness and sweetness.

In this “& CHEESE SAKE”, we succeeded in adding rich sweetness by adding sake lees.

Furthermore, as the final process, by applying a sauce made of salt and sake lees to the surface and baking it, it was possible to express the aroma while emphasizing the sweetness by the saltiness. In addition, in order to reduce sugar while maintaining the deliciousness, we do not use ordinary sugar, but use Luo Han Guo extract (Luo Han Guo) as a natural sweetener.

As for protein, in addition to being contained in the dairy product itself, it is further supplemented with protein made from milk.

Focus on sake lees, aiming for delicious "low-carbohydrate" sweets

We use “sake lees” that are produced in the process of brewing sake. Sake lees are rich in amino acids and glucose made from fermented rice, and have plenty of umami, so they add depth and richness to the taste.

This time, sake lees will be provided by “Kamikawa Taisetsu Sake Brewery” in Hokkaido.

At Kamikawa Taisetsu Sake Brewery “Aounzo” in Tokachi, a treasure trove of food, only sake rice from Hokkaido made by a producer who understands the face is used, and the water used is sourced from the Hidaka Mountains and is the best in Japan many times. Sake brewing is carried out using medium-hard water from the Satsunai River system that shines in the clear stream of Hokkaido.

At “& CHEESE SAKE”, all dairy products use ingredients from Hokkaido. By using sake lees from Kamikawa Taisetsu Sake Brewery, which has a brewery in Hokkaido and sticks to local ingredients, we were able to complete a cheesecake with a more unified concept.

ZIPANGU Contemporary artists who have run through the Heisei era” Takashi Murakami x Sueo Mizuma dialogue: ‘Beyond the Theory of Artistic Entrepreneurship’ / Interview with Mr. Mizuma: ‘Rediscovering the Value of Japanese Culture by the Japanese People

The Hiroshima Museum of Art is hosting the exhibition “ZIPANGU: Contemporary Artists Who Defined the Heisei Era” (November 2, 2024 – December 22, 2024). This showcase brings together works by some of the most prominent figures in Japan’s contemporary art scene, including Yayoi Kusama, Takashi Murakami, Makoto Aida, Yoshitomo Nara, Chiharu Shiota, Izumi Kato, Akira Yamaguchi, and Miwa Komatsu. The exhibition has already garnered significant attention, exceeding 10,000 visitors.

HYAKKEI covered the dialogue between contemporary artist Takashi Murakami and Sueo Mizuma, the curator of this exhibition, held at the RIHGA Royal Hotel Hiroshima. We also conducted an exclusive interview with Mr. Mizuma.

The discussions centered on the aspirations behind the ZIPANGU exhibition and offered forward-looking insights, not only into Japan’s art world but also into the rediscovery of value within Japanese culture by its people.

Two types of paper seals made exclusively for autumn, ‘Chrysanthemum and Tanzaku’ and ‘Autumn Leaves and Candles’, have been available since Monday 9 September at Daisho-in Temple on the World Heritage island of Miyajima. Quantities are limited and will run out as soon as they are gone.
