Yamada-ya’s special smooth red bean paste and a whole Japanese chestnut from Ehime Prefecture are enveloped in a Baumkuchen made with fragrant Uji matcha. This exquisite creation blends traditional red bean paste with Western confectionery techniques, resulting in a moist texture where the moderate sweetness of the paste and chestnut harmonises beautifully with the subtle bitterness of the matcha. It is even more delicious when served with fresh cream, much like a Sachertorte.
