The Andaz Tropezienne Selection Box is a gem of Chef Patissier Normand Jubin’s family tradition and his exceptional skills.
The dough of this new brioche, with its perfect balance between light, airy texture and semi-hard chewiness, is made from a sourdough recipe that Chef Norman, born into a family of three generations of pastry chefs, has inherited from his grandfather and father, both bakers and patissiers, for over 50 years. A sourdough starter with just the right acidity gives it depth.
The ‘Original’ Flavoured Cream is Chef Norman’s own original alternative to the custard often used in Tropeziennes.
To achieve both a rich flavour and a light texture, fresh cream, mascarpone, orange blossom water and a little gelatine are combined using his knowledge of molecular science. Tradition and innovation concentrated in a little sweet.
Variety of flavours
The Andaz Tropezienne Selection Box is an assortment of six flavours: ‘Original’, ‘Chocolat’, ‘Raspberry’, ‘Matcha’, ‘Citrus’ and an assortment of limited edition ‘Seasonals’ using seasonal ingredients.
The ‘Original’ with orange blossom water, the ‘Matcha’ with the local expression that only Andaz Tokyo can offer, and the ‘Citrus’ with yuzu and seekwasa, all popular in Japan, are all made from scratch, and the ‘Citrus’ flavour using yuzu (citrus fruit) and seekwasa (Okinawan citrus fruit), both popular in Japan, are just some of the six different flavours on offer. There are several ways to enjoy the flavours, including sharing and comparing.
