The plum wine cocktail specialist ‘The CHOYA Ginza BAR’ will be offering the ‘Starry Night Sky Shaved Ice’ for a limited time from Friday 22 May to Thursday 24 September. This creation evokes the image of a fantastical blue night sky, where stars twinkle and dance beautifully amidst the stillness of the night.
A layer of jelly made from fully ripened plums, cranberries and butterfly pea is topped with a layer of fruit ice made from butterfly pea and blueberries, followed by a layer of hojicha plum milk espuma. The dessert is garnished with star-shaped ramune and plum rice crackers, and finished with a single frozen, fully ripened Nanko plum.
The dessert comes with a set of three original plum wine syrups. When you pour the plum wine syrup over the fruit ice, the colours of the starry sky shift, allowing you to enjoy a fantastical transformation, as if shooting stars were illuminating the night sky. Furthermore, by crushing the frozen Nanko plum, the plum extract is released, allowing you to savour its intense tartness.
