Wakuden will once again be selling ‘Kaka’, a chocolate confection that sold out within five days of its limited-time release in February this year, from Sunday 1 November 2026.
‘Kaka’ is a creation in which dark chocolate is used to coat ‘Kashō’, a mixed nut confectionery formerly sold by Wakuden. Orders are being accepted via the official online shop from Wednesday 7 October.
Wakuden: Kyotango, the Birthplace of the Company, and Its Deep Connection to Sanshō
In Kyotango, the birthplace of Wakuden, sanshō has long been cherished as a seasonal ingredient, alongside spring tree shoots and early summer flowers and fruits.
At Wakuden, too, we create dishes that make the most of its aroma, such as Kyoto beef hotpot with flower sanshō and chirimen sanshō.
We cultivate sansho, learn about the local produce that is deeply rooted in the land, nurture it, and use it at the peak of its season. Rooted in the culinary culture of our founding region, sansho has become one of the ingredients that Wakuden has cherished for many years.
From savoury dishes to confectionery: ‘Kajō’—a new way to enjoy sanshō
Wakuden’s ‘Kajō’—a mixed nut confectionery previously available—is the result of the brand applying sanshō, a flavour traditionally associated with savoury dishes, to confectionery.
This confection consists of a mixture of nuts and dried fruits, set together and with whole sansho peppercorns hidden within. The toasty aroma of the nuts and the natural sweetness of the fruit are complemented by the refreshing fragrance of sansho.
Rather than allowing the sansho to dominate, it enhances the flavours of the other ingredients. ‘Kajō’, born from this philosophy cultivated through Japanese cuisine, led to the creation of the chocolate confection ‘Kaka’.
‘Kaka’—born from the fusion of Japanese culinary sensibility and chocolate
‘Kaka’ was created in collaboration with Mr Akihiro Kakimoto, founder of the Kyoto-based chocolate boutique ‘Assemblage Kakimoto’.
Mr Kakimoto is a chocolatier and chef who is also active in the culinary world. Cherishing the concept of ‘combination’—the meaning behind his shop’s name—he pursues flavours that bring out the natural aromas and textures of the ingredients.
Wakuden, which values the inherent qualities of its ingredients, and Mr Kakimoto, who is well-versed in both cuisine and confectionery.
As their sensibilities converged, ‘Kaka’ was born—a creation in which ‘Kashō’ is enveloped in dark chocolate. The sweetness and slight bitterness of the chocolate blend with nuts and dried fruit, whilst natural salt from Kyōtango adds a crisp finish, leaving a refreshing aftertaste of fresh sanshō pepper.
This is not merely a creation that adds traditional Japanese ingredients; it is a product born from Wakuden’s philosophy of flavour creation. Its name derives from the ‘Ka’ in ‘Kashō’ and the ‘Ko’ in ‘Kokoa’, which represents cocoa.
