Matcha shortcake with a beautiful vivid cross section reminiscent of kimono layering. The sponge is made from two types of specially made dough, made by mixing Wasanbon sugar and matcha, based on “brown rice eggs” made by chickens grown on unpolished brown rice. A smooth almond milk cream and gentle sweet soy milk white ganache are sandwiched between the mouths to enhance the scent of the rich Uji matcha custard cream that plays a leading role. Aogashima’s “Hingy’s salt” is used to add black honey bean paste and black honey jelly and sticky white balls. The fresh lychee is a refreshing accent and you can enjoy it without getting tired until the end. The top is gorgeously finished with macaron of matcha.
