From February 20, 2024, Hoshinoya Tokyo, a Japanese ryokan with a tower that has evolved to meet the needs of the modern age, will offer the “Breakfast of Awakening” to balance the body and mind by returning to the “five tastes, five colors, and five laws” of Japanese cuisine. This is a breakfast at a Japanese ryokan that will help you start a beautiful day by balancing your mind and body from the inside out.

Japanese breakfast with the five tastes, five colors, and five methods of Japanese cuisine

This is a Japanese breakfast that uses seasonal ingredients and focuses not only on the deliciousness of each dish, but also on achieving a balance among the five tastes (sweet, sour, salty, bitter, spicy), five colors (red, yellow, blue (green), white, black), and five methods (raw (cutting), boiling, baking, steaming, frying) of Japanese cuisine.

A meal with a balance of the five tastes, five colors, and five methods will help you start your day in good health.

Original lacquerware painstakingly crafted by artisans

The “Breakfast of Awakening” is served on an original lacquered dish and tableware used by Zen Buddhist monks.

The square bowls are arranged in odd numbers, which is considered auspicious, to maintain balance in the use of dishes. This is a special morning experience where you can feel the Japanese sense of beauty and taste from the beauty of the dishes, which are made by skilled craftsmen with great care, and from the unique Japanese values of shape and number.
