Mendokoro Muraji, a ramen restaurant in Yanagibaba, Kyoto, will start selling its winter speciality ‘Savoury fried bean curd and sakekasu ramen’ from 15 November 2024 (Tuesday). Produced under the supervision of Sasaki Sake Brewery, a traditional Kyoto sake brewery that has been in business for over 120 years, this product is a superb fusion of the brewery’s sake lees and Muraji’s chicken white soup.

A winter's cup of Kyoto's history.

The popular annual ‘Sakekasu Ramen with Scented Fried Rice and Sakekasu’ is available in limited quantities of only 20 servings per day, as all the ingredients are carefully selected to maximise the sakekasu-infused broth.

The fried bean curd in the bowl comes from the famous Hirano Tofu restaurant, a favourite of Kitaoji Rosanjin, who devoted his life to gastronomy.
Carefully prepared using Kyoto’s high-quality, abundant underground water, the tofu is pure and absorbs the flavour of the soup in your mouth.

There is also a wide variety of carefully prepared Kyoto vegetables. Shogoin daikon radish, Kyoto carrots, kujo leeks and other winter colours are arranged in a colourful arrangement. The flavour of Kyoto vegetables, stored during the winter season, is captured in a cup of Kyoto’s finest tea.

Relaxing Japanese-style spaces are available.

Muraji Ramen Restaurant prides itself on its ramen noodles, which are carefully prepared by artisans over a long period of time in a broth made with the greatest attention to detail using Kyoto’s local chicken.

The restaurant also pays special attention to the dining area, with a separate room leading through a tsuboniwa garden, which is unusual for a ramen restaurant, where customers can enjoy their ramen in a room with a Taisho-Roman atmosphere.
