The afternoon tea starts with a toast with Verde Cooler, a welcome drink with a citrus flavour trapped in a bubble.

The most eye-catching item on the main tea stand is the Sayama Matcha Parfait with Kuromitsu, which evokes the beautiful fresh greenery of Japan. The parfait is decorated with chestnuts resembling garden stones on top of Sayama Matcha cream, with Sayama Matcha cream used to draw water patterns to represent a karesansui (dry landscape garden).

The two types of scones (Sayama green tea and Sayama hojicha) are served with a jam made from yuzu citrus fruits from the town of Echigo-Town, which are characterised by their high fragrance and thick pulp.

The mouth-watering Sayama Hojicha Panna Cotta and Sayama Hojicha Baked Cheesecake, accented with the fragrance of hojicha and the freshness of citrus fruits, are among the tea-filled sweets that will excite your taste buds.

Savouries include dishes inspired by the beautiful season of fresh greenery, such as ‘Colourful Steam Salad – Sayama Tea Genovese Sauce’ and ‘Kawagoe Matcha Potato Crumble’, which uses Kawagoe Matcha green tea, grown in traditional tea gardens in the former Kawagoe territory, with its rich taste, richness and unique aroma.
