On August 8, 2022, the theme park “Kyoto Rikyu: Odashi and Dashimaki” opened, offering a variety of experiences so that visitors can easily practice sustainable initiatives to incorporate dashi from their diets.

– Ingredients of dashi to stimulate the five senses, and a mechanism to visually appeal to the charm of dashi in the store –
The aroma of dashi (Japanese soup stock) that pervades the store first stimulates the sense of smell.
Next, the 8-meter showcase appeals to the sense of sight.
There, visitors are presented with the appeal of dashi, cooking recipes, and Japanese cuisine, as well as suggestions for living with dashi from all angles.
The 4-meter showcase, which conveys the appeal of dashi packets, features natural ingredients that are actually used.
In addition, an object next to the entrance provides a space where visitors can actually hold the natural ingredients in their hands and enjoy the aroma and touch.
After the covid-19 pandemic is over, we plan to offer dashi tastings and many other experiences to enjoy dashi.

– Dashimaki Gozen and Kama-taki Gohan (rice cooked in an iron pot) with your choice of dashi from a selection of four types of tasting dashi broth –
First, choose your favorite dashi from four types (Rikyu-no-Odashi, Kyoto’s mackerel, Dried flying fish, and Fermented dried bonito), and then enjoy a dashimaki gozen made with the dashi you have chosen.
You can finish the meal with dashi chazuke. (During the summer season, chilled dashi chazuke is served.)

Products that make effective use of wasted ingredients
We sell dried vegetables that make effective use of Kyoto’s small mackerel, which were exported to Asia because of their low product value, and non-standard vegetables that were discarded.
In addition, we are currently developing products such as Odashi curry that makes effective use of parent chicken, and we plan to continue to develop products that make effective use of materials that have been disposed of as well as efforts to reduce food loss.
