On Monday, January 30, 2023, the tonkatsu restaurant “Mitori” opened in Kobe. The supreme taste of the restaurant’s specialties, including seasonings, vegetables, rice, miso soup, and even the Japanese black tea served, is a new genre of “tonkatsu cuisine” that overturns the conventional concept of tonkatsu. We are bringing a new style to the Tokyo culture of tonkatsu from Kobe.

・The best salt of the Goto Islands
To maximize the flavor of the meat, we use the best salt from the Goto Islands.
Ichibanzai salt is the first mineral-rich crystals that float in the seawater of the Goto Sea, which is slowly boiled down with wind and firepower, making it an extremely valuable sea salt.

・Wasabi + soy sauce
The wasabi is made from pesticide-free wasabi from Izu, and the soy sauce is a naturally brewed, lightly soaked soy sauce from Katagami Soy Sauce in Gosho City, Nara Prefecture. We have carefully selected the soy sauce that goes well with our tonkatsu.

・Special mustard sauce
A blend of Tasmanian mustard and Japanese mustard. It enhances the flavor of tonkatsu.
