CHOYA Ginza BAR, which specialises in plum wine cocktails, will launch ‘Enchanting Plum Parfait Plum Muscat Royale’ and ‘Enchanting Plum Parfait Plum Gateau’ from 27 September 2024 (Friday) to 15 January 2025 (Wednesday), with a cocktail concept in search of a dessert that can only be enjoyed at a bar specialising in plum wine cocktails. The new products will be available for a limited time from 27 September 2024 (Friday) to 15 January 2025 (Wednesday).

Plum Muscat Royale

A layer of plum and strawberry syrup is topped with a layer of plum jelly decorated with cheinmuscat, edible flowers and mint, covered with a galette and topped with cheinmuscat and frozen ripe plums. Finally, the barman adds sparkling plum wine to create a cocktail parfait with a beautiful rosé colour and refreshing taste.

Plum gateau fromage

A martini glass is lightly brûléed with a layer of plum, blueberry and strawberry jelly, and a layer of cheesecake made with ripe plums, topped with a refreshing lemon sorbet and frozen ripe Nanko plums. The fruity, refreshing acidity of the ripe plums matches the creamy taste of the cheese in this rich plum parfait.

‘Umezukuri Afternoon Tea & High Tea’ course.

The two parfaits introduced here can be selected as desserts from the 2-hour 30-minute all-you-can-drink course, which includes more than 100 drinks, including plum wine cocktails and non-alcoholic plum wine cocktails.

Iide Town, Yamagata Prefecture] “Submerged Forest of Lake Shirakawa,” a Mysterious Spring-Only Scene

The mysterious scenery of Lake Shirakawa in the town of Iide in southern Yamagata Prefecture can be seen only during two months in spring. In spring, a large amount of melt water flows into Lake Shirakawa from the Iide mountain range, one of Japan’s 100 most famous mountains, where there is heavy snowfall. When the lake is full of water, it creates a fantastic sight of white willow trees as if they are growing out of the water.
