“NIPPONIA Taharamoto Malt soy sauce” Soy sauce storehouse

Mart Co., Ltd., the oldest soy sauce brewery in Nara Prefecture, which was founded in 1689 (Genroku 2), will open the old folk house hotel “NIPPONIA Taharamoto Malt Soy Sauce” which is a renovated soy sauce brewery on Saturday, August 29th.

Mart soy sauce is the oldest soy sauce storehouse in Nara Prefecture. It was closed 70 years ago, but with the reconstruction of the soy sauce warehouse, this year, we will renovate a 130-140-year-old warehouse to a part of the accommodation building and open it again.

Upon the revival of the soy sauce warehouse, Hiroyuki Kimura, the 18th owner of the company, unraveled the old texts of the tradition and challenged to make soy sauce. While continuing to explore traditional manufacturing methods, it was discovered that Kuratsuki fungi had survived for the first time in 70 years, leading to the opening of this business.

In addition to ancient documents, the brewery, residential building and tools remain in the warehouse, and a part of the building will be renovated and a new start will be made as accommodation facility “NIPPONIA Taharamoto Malt Soy Sauce”. Soy sauce is still being brewed and we are aiming to launch it in 2022.

About the building

The entire mansion is centered around a main building that retains the unique Yamato-zukuri structure unique to Nara. From that appearance, you can feel the life of the brewers who lived and worked in this warehouse everywhere.

All seven guest rooms are furnished and decorated with the idea of how the soy sauce brewery used to be used.The room where old documents were stored is “Fuzo,” and the warehouse where raw materials are stored is ” Room names such as “Koji” and “Usui” are also based on the history of soy sauce making and brewing.

In the spaces other than the guest rooms, there are many feelings of “hospitality” that have been set up since the establishment of Kura. About soy sauce

Soy sauce, which has revived for the first time in 70 years, is still being brewed. The soy sauce of malt soy sauce, which is particular about local ingredients and natural brewing, is carefully aged for about two years before it can be served to customers as soy sauce. Sales will start in 2022.

Since its founding in 1689, the taste has been carefully made with soybeans and wheat, which are mainly from Tahara, and it was rich in flavor and was a purveyor to the imperial family. We felt the existence of God there, learned the importance of food, and walked so far. The brewing of soy sauce is also said to “see God” in the fermenting scene, and I am making it while feeling it.

For me, the revival of the soy sauce brewery for the first time in 70 years has given me a chance to come into contact with what is important in the region.
