‘Grapes’, ‘white bean paste’ and ‘rice cakes’. The fruit used for Daifuku must have acidity as well as sweetness, otherwise it does not go well with the mochi and white bean paste. New Pione grapes are used for Daifuku grapes. The fruit is carefully removed from the bunches by hand by artisans and transformed into Daifuku.
The New Pione has a high sugar content of more than 16 degrees Celsius, but the balance of sweetness and acidity is exquisite. The smooth white bean paste has a refined taste that can only be achieved by homemade bean paste, which is made by anko (sweet bean paste) craftsmen with care and attention. And the soft rice cake.
