Atelier Kyo-Baam, one of the largest confectionery museums in Kyoto, which includes a shop, factory and café, and which incorporates various elements of Kyoto, green tea and baumkuchen, will offer seasonal lemon-flavoured baumkuchen and café menu items from Friday 19 July 2024. The Baumkuchen and Café menu will be available from Friday 19 July 2024.
Lemon baumkuchen
This refreshing Baumkuchen is made with lemon juice and zest paste, giving it a fluffy, moist texture. Lemon juice is also used in the fondant (sugar coating) around the Baumkuchen to bring out the acidity in the sweetness, while the peel adds an aromatic accent. It can also be served chilled.
Matcha Lemon Squash
This lemon squash is a spicy-sweet and sour lemon squash. By adding the optional matcha (powdered green tea), you can enjoy a refreshing and clean taste with the aroma of powdered green tea.
The matcha is made from Uji Matcha from Morihan, which was founded in Tempo 7, the same year as the Kyo Baumkuchen.
Gelato Lemon cream vanilla
This gelato combines vanilla-scented milk cream with refreshing lemon. Lemon zest and juice are used to create a refreshing aftertaste.
atelier Kyo-baamu
The production of Kyo-Baamu can be observed free of charge from the factory tour corridor on the second floor; from spring 2024, a hands-on programme to bake mini-baumkuchen with matcha green tea will begin.
