“Unexpectedly tongue” in Yaizu City, Shizuoka Prefecture, sells “Kuchidoke”, a high-class furikake that is often noticed in the media. This time, the high-quality furikake “Kuchidoke” is sold in Shizuoka’s traditional craft “Surugashi Lacquerware”. The sale period is until July 31, 2020, and the delivery will be after the end of November 2020.
It takes time to produce, but each one is carefully finished by a lacquer craftsman and a lacquer craftsman.

Melting feeling that you want to experience!

Appearance, texture, texture, aroma… It is completely different from the usual furikake!

In order to enjoy the melting texture in the mouth, it was important to cut it to a very thin 0.01 mm. It’s a micro world. It has been finely adjusted with the sensation of a skilled craftsman to achieve an extremely thin 0.01 mm. It is the source of melting melt.
The material used is the rare bonito flakes, which is said to be one in 10,000 bonito flakes, and is extremely thinly cut. All the seasonings are made using the secret sauce of natural materials, and all the processes are finished by hand so that you can fully utilize the taste of the materials.

Traditional craft "Surugashi lacquer ware", "Surugaki makie" Red Fuji

I put it in a container of “Suruga lacquer ware” and “Suruga makie” which are traditional crafts of Shizuoka. A lacquer craftsman paints many times, and a lacquer craftsman paints red fuji on it. Traditional techniques are concentrated.


In Japan, lacquer has been used since the Jomon period. It was the construction of Asama Shrine that led Lacquerware to take root in Shizuoka. Lacquer was collected from all over the country, and then the tradition of lacquer took root and became known nationwide as “Suruga lacquerware.”

In this “Akafuji,” the surface is hardened, grounded, undercoated, and intermediately coated, and then applied multiple times to give a black luster. Also, the inside is painted to show the warmth of the wood.

Maki-e refers to a lacquerware that is painted with lacquer, such as lacquer, and sown with gold and silver powder, to draw pictures and patterns.

Seven years have passed since “Japanese food” was registered as a UNESCO Intangible Cultural Heritage. As a person involved in Japanese food, I want to pass on our technology and tradition to future generations, and I wish that the Japanese culture itself could be passed on to future generations.

From November 22 (Wed) to December 3 (Sun), 2023, an autumn foliage lighting event will be held at Shinjuku Gyoen.
